Ingredients:
- 1 lb salmon cut into 4 pieces
- 1/2 cup fat-free sour cream
- 2 T lemon juice
- 2 T sweet hot mustard
- 2 tsp dried dill
- 1 1/2 tsp curry
- 1/2 tsp garlic salt
- 1/2 tsp garlic powders
- 1/2 tsp red pepper flakes
- 4 c vegetables, cut into bite size pieces
Directions:
- preheat oven to 400′F
- combine sour cream, lemon juice, mustard, and dill
- cut foil into 4 big squares (large enough to hold 1 cup of vegetables and 1 piece of salmon)
- place 1 piece of salmon skin side down in each square
- arrange 1 cup of vegetables around salmon
- sprinkle with garlic salt, garlic powder, curry powder and pepper
- spread 2 to 3 TB of sauce over each piece of salmon
- close packets and place in baking dish
- bake approx. 30 minutes
- open foil packets and broil for an additional 2 – 3 minutes if desired
