Baked Salmon with Veggies!

Try with yummy baked salmon recipe for a quick and tasty weeknight meal!Baked Salmon with Veg

Ingredients:

  • 1 lb salmon cut into 4 pieces
  • 1/2 cup fat-free sour cream
  • 2 T lemon juice
  • 2 T sweet hot mustard
  • 2 tsp dried dill
  • 1 1/2 tsp curry
  • 1/2 tsp garlic salt
  • 1/2 tsp garlic powders
  • 1/2 tsp red pepper flakes
  • 4 c vegetables, cut into bite size pieces

Directions:

  • preheat oven to 400′F
  • combine sour cream, lemon juice, mustard, and dill
  • cut foil into 4 big squares (large enough to hold 1 cup of vegetables and 1 piece of salmon)
  • place 1 piece of salmon skin side down in each square
  • arrange 1 cup of vegetables around salmon
  • sprinkle with garlic salt, garlic powder, curry powder and pepper
  • spread 2 to 3 TB of sauce over each piece of salmon
  • close packets and place in baking dish
  • bake approx. 30 minutes
  • open foil packets and broil for an additional 2 – 3 minutes if desired
