Zucchini Tomato Cheese

zucHere’s a delicious recipe for the Carb Reducer craving some pizza! Take a zucchini and halve it, scoop our the insides where the seeds are on both sides. You might want to trim the bottom a little so it sits in the pan steady. Then, brush the surface of the zucchini with a mixture of crushed garlic, olive oil, salt, and pepper. Arrange halved grape tomatoes into the grooves,and put in oven at 350 degrees for 30 minutes. Next, sprinkle zucchini with shredded part skim mozzarella cheese place back in the oven under the broiler until bubbling. Remove and drizzle with olive oil and grated parm cheese! E N J O Y!

Avocado Chicken Salad

Sure avocados are calorie dense and fatty, but it is healthy monounsaturated fat, eating avocados (in moderation) can help you trim imagesyour waist line, lower your “bad” LDL cholesterol and elevate your “good” HDL cholesterol! Avocados are also a great substitute for saturated fat, like mayo in this recipe!

Creamy and delicious Avocado Chicken Salad!

  • 1 cup chicken, diced
  • 1 egg, diced
  • 2 tbsp diced red onion
  • 1/4 cup diced celery or zucchini
  • 1 avocado, ripe
  • 1 lemon, juiced
  • salt to taste

Dice your chicken, egg, onion, and celery. Scoop your avocado into a bowl and mash with a fork until creamy. Mix in lemon juice and a couple dashes of salt. Add your diced foods to the bowl and mix until coated. Put on a large leaf of lettuce and wrap up to eat! As always – E N J O Y!

Stuffed Avocados! Delicious!

What a yummy side dish to go along with any barbeque or even just a simple dinner! 5-5-2010-023_thumb

  • 6 avocados (halved)
  • 2 ears of grilled sweet corn
  • 1 c. quartered grape tomatoes
  • 1/2 small red onion, finely chopped
  • 1 tablespoon balsamic vinegar
  • 2 tsp olive oil
  • 2 tbsp chopped cilantro
  • pinch of cayenne pepper or chipotle powder
  • lime juice, squeezed over the filled avocado halves before serving

Grill the corn and avocados (if desired), cut the kernels off the cob and mix all ingredients (except avocados together). Stuff avocados and ENJOY!!!

Frozen Peanut Butter Banana Bites!

Need an after workout pick me up? Try these Frozen Peanut Butter Banana Bites, jammed packed with the perfect ratio of carbs to 71002131596040693_Sefcq432_cprotein, these tasty little buggers are satisfying and nourishing! Try them!!

5 medium ripe bananas
1 tbsp. all natural creamy peanut butter
2 oz. nonfat vanilla Greek yogurt

  1. Peel one banana and mash it with the peanut butter and yogurt. Set aside.
  2. Peel the other four bananas. Slice into half-inch thick slices. Smear the banana, peanut butter, and yogurt mixture on half the banana slices and top with the other halves, making banana sandwiches. Place on a wooden cutting board or a plate and freeze for at least two hours.
